These are my go to Homemade Chicken Bites made from scratch. They are simple to make and have minimal ingredients. You can eat them as they are, add them to a salad or wrap for lunch, and or even add them to a pasta recipe for a quick dinner.

Why make homemade chicken bites from scratch?
Well why not? They aren’t hard to make and they don’t take too much time either. They are crispy and not overly breaded. I like being able to control how much breading they have on them. There’s nothing worse than biting into a chicken strip or chicken bite and having a mouthful of breading with the littlest amount of chicken inside. You get to control the ingredients that they have. If you are needing or wanting to stay away from certain things, well, you have full control here. My family and I love these Homemade Chicken Bites.
What you’ll need
- 3 pounds of boneless skinless chicken breast (OR chicken thighs)
- 2-3 Eggs
- 2 cups of Flour (Your choice which kind!)
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1/2 tablespoon Herbs De Provence or Italian Seasoning
- 1 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- Oil for frying ( I used avocado oil.)

I had three chickens in the deep freezer that we had processed. I used all six of the chicken breast from these chickens which was a total of 5 lbs of meat. I did have to make an extra batch of the flour mixture.

Using a whole Chicken
If you choose to use a whole chicken like I did, you will cut the chicken breast off the bird and then part out the rest of the chicken. I took off as much breast as I could, then separated the wings, legs and thighs. I saved and froze those other cuts for another meal and threw the carcasses in a freezer bag to make broth with later on.


What’s next…
Now that you have your chicken ready cut the breast into 2 inch cubes. They can be bigger or smaller. It really is up to your liking.

Once you have the chicken cut into cubes. Add all your spices and flour into a bowl. Crack your eggs into their own separate bowl and give them a whisk.

Let’s get to dredging
Now there are multiple ways you can dredge and coat chicken. If you want a heavier breading start with flour, then egg and then back into flour. Since I am going for a light bread coating, I went from egg first to flour next but only once.

Once you get your little nuggs coated, place them on a plate or pan until you are ready to cook them up.

It might not look like there is enough coating on the chicken bites but trust me there is. When you cook them they will be fully crispy and covered with breading.
PRO TIP: If you have any flour mixture left, you can save it for breading another batch of chicken next time. Throw it into a freezer bag or a freezer safe container and plop it in the freezer.

Cook’em Up
You will want to put the oil in your pan that only reaches half way up the chicken chunks. Well truly you can go deeper or more shallow. Remember this is your recipe after all. But I do half way. It allows the bottoms to cook and then I flip them one time. You’ll turn the burner to medium heat and wait for the oil to heat up.
Once the oil is hot enough, place your chicken in the pan, but don’t over crowd the pan. You want the chicken to brown nicely and not just sit in the oil soaking it up like a sponge.

You will cook the Homemade Chicken Bites for 5-7 minutes or until they are 165°. Once cooked, rest them on a cooling rack to drain off excess grease and to allow them to cool to get a crispy coating.
PRO TIP #2: I cook mine to where they are a little under done. When I cook these up, I like to make a big batch and freeze them for quick grab lunches and adding protein to dinners. When you reheat them in the microwave, oven or air fryer, they will dry out if they are fully cooked prior to freezing. So be mindful of that.

Easy Homemade Chicken Bites
Ingredients
- 3 lbs Chicken Breast
- 2 cups Flour
- 2-3 Eggs
- 1 tbsp Garlic Powder
- 1 tbsp Onion Powder
- ½ tsp Herbs De Provence or Italian Seasoning
- 1 ½ tsp Salt
- ½ tsp Pepper
- ½ tsp Paprika
- Avocado Oil or Any High Temp Oil
Instructions
- Cut the breast into 2 inch cubes.
- In one bowl add flour and all spices, then mix together.
- In a separate bowl add your eggs and give them a whisk.
- Add your oil of choice to a frying pan. Only deep enough to cover half the chicken.
- Heat oil on medium heat, while you coat your first set of chicken bites.
- Now take your cubed chicken pieces and dip them in the egg, then into the flour mixture. (Try to get as many chicken bites coated while your oil is heating up.)
- Once oil is hot enough, add chicken pieces into pan. Do not over crowd and bring temperature of oil down!
- When the chicken sides go from pink to white, flip onto other side.
- Cook a total of 5-7 minutes or until 165°
- Remove chicken bites from oil and drain on cooling rack. (Sprinkle with extra salt if desired.)
- Enjoy!
